Method
Cider-braised red cabbage
1) Heat a heavy-bottomed large casserole dish over a medium heat.
2) Add the butter and melt.
3) Add the caraway seeds and stir until fragrant, about 30 seconds.
4) Add the cabbage in batches until slightly wilted, about 5 minutes.
6) Add the cider and vinegar and simmer for 15 minutes or until the cabbage is soft and supple.
7) Season with salt and pepper.
