Method
Berry 'nana oatmeal parfait
Combine all the ingredients for the oatmeal in a small nonstick pan. Add 180ml of water and mix well. Bring to the boil over a medium-high heat, and then reduce to a simmer. Cook for about 9 minutes, stirring often, until somewhat thick and creamy. (It will thicken more upon chilling.)
Remove from the heat and allow to slightly cool. Transfer the oatmeal to a bowl, cover, and refrigerate until chilled, at least 1.5 hours.
Stir the oatmeal thoroughly until uniform in texture. Spoon half into a pint glass, and top with 1/2 the sliced strawberries, 1/2 the yoghurt, and half the banana slices. Repeat with the remaining oatmeal, strawberries, yoghurt and banana. Serve and enjoy!
